Rye flour and rye meal are acidified with the help of traditional artisan sourdough. This biochemical souring process produces a certain ratio of lactic acid, acetic acid and yeasts, which are able to ferment the rye flour and make it suitable for baking and digestion. No chemical acids or other baking aids need to be added to this bread.
Cakes and desserts
The basis for this are bases made from sponge cake mix (without a leavening paste, traditionally hot and cold whipped). We use a light "German cream" based on vanilla custard and butter.
